Mayonnaise - Use a good-quality store-bought mayo. Use your favorite brand, I know people are very loyal to their mayo. Just for reference, we use Duke's.
Garlic - Fresh garlic gives the aioli its signature flavor. Grate it with a Microplane for a smoother texture, or finely mince it and then press it with the side of a knife or the back of a spoon to make a paste.
Lemon juice - Fresh lemon juice brightens the flavor and balances the richness of the mayonnaise and olive oil.
Extra virgin olive oil - Adds a slightly fruity richness, use a good-quality oil.
Salt and black pepper - Simple seasonings that enhance the flavor of the sauce.
Fresh parsley - Optional, but it adds a little color and freshness for serving (not pictured).

How to make garlic aioli

Add the mayonnaise, garlic, lemon juice, olive oil, salt, and black pepper to a small bowl or jar with a tight-fitting lid.

Stir vigorously with a fork or small whisk until smooth and combined.
Taste and add extra salt, if needed. As a reference, we did not add extra salt to ours. Cover and refrigerate for at least 15 to 30 minutes to let the flavors come together.

Serve as a dip for French fries, fried yuca, grilled vegetables, or shrimp, or spread on burgers, sandwiches, or sliders.
Store in an airtight container in the refrigerator for up to 7 days. Stir well before each use.
Recipe tips and notes
- For a smoother texture, use a Microplane to break down the garlic. It's a great tool to have around for garlic, ginger, zesting lemons, and Parmesan cheese.
- Reduced-fat mayonnaise can be substituted; however, the aioli may have a thinner consistency.
- Adjust the amount of garlic to suit your taste. Use a small clove or half a clove for a milder flavor. If you love garlic, add a little extra.
