Taste and add extra salt, if needed. As a reference, we did not add extra salt to ours.
Cover and refrigerate for at least 15 to 30 minutes to let the flavors come together.
Serve as a dip for French fries, fried yuca, grilled vegetables, or shrimp, or spread on burgers, sandwiches, or sliders.
Store in an airtight container in the refrigerator for up to 7 days. Stir well before each use.
Notes
For a smoother texture, use a Microplane to grate the garlic. If you do not have one, finely mince the garlic and press it with the side of a knife or the back of a spoon to make a paste.Reduced-fat mayonnaise can be substituted; however, the aioli may have a thinner consistency.Adjust the amount of garlic to suit your taste. Use a small clove or half a clove for a milder flavor. If you love garlic, add a little extra.
