How to make chicken vegetable soup

- Place the chicken breasts side by side in a large pot (we use a 4-quart Dutch oven). Add about 2 cups of chicken broth, enough to cover, and a pinch of salt.
- Bring to a boil, then reduce the heat to medium-low. Cover and simmer gently for 20-25 minutes, turning halfway through, until the chicken reaches 165°F. Remove to cool, then strain and reserve the cooking broth.
- When the chicken is cool enough to handle, shred or cut it into bite-sized pieces. Tip: You can start preparing the soup while the chicken cools, then shred it during the first simmer to save time.
- Dry the pot if needed, then heat the olive oil over medium heat. Add the onion and celery and cook for 3 minutes, stirring often.

- Add the garlic, tomato paste, Italian seasoning, and black pepper. Cook for 30-60 seconds, stirring frequently.
- Add the reserved cooking broth and remaining chicken broth, scraping any bits off the bottom. Bring to a boil, then reduce the heat to medium-low. Cover and simmer for 5-7 minutes.
- Stir in the pasta, return to a simmer, and cover. Cook for 5 minutes, until almost done, stirring often at first to prevent sticking.
- Add the cooked chicken and partially cooked, drained mixed vegetables. Return to a simmer, reduce the heat to medium-low, and cover. Cook for 5-7 minutes, stirring occasionally, until the pasta is tender and the soup is heated through.

- Taste and add salt if needed. As a reference, we didn't add extra to ours. Garnish with chopped parsley, if desired, and serve.
Recipe tips and notes
- Salt: Don't add too much salt at the beginning because packaged chicken broth already contains a good amount. Taste the soup at the end and add more if needed. Use reduced-sodium broth if you're sensitive to salt.
- Vegetables: If you prefer to use different vegetables, choose ones that will hold up during cooking, or adjust the cooking time so they don't become too soft.
- Pasta: Small pasta works best in this soup. Keep in mind that pasta continues to absorb broth as it sits, so you may need to add a little extra chicken broth when reheating.
- Chicken: Boneless, skinless chicken thighs can be used instead of breasts. Adjust the poaching time as needed and cook the chicken to an internal temperature of at least 165°F.
Can I use already cooked chicken?
Yes. You can use leftover cooked chicken or rotisserie chicken to save time. Keep in mind that the broth won't have the extra flavor it gets from poaching the chicken in the recipe. To make up for some of that flavor, add 1 teaspoon of chicken base to the broth, or to taste. Add the cooked chicken toward the end with the mixed vegetables and heat through.
Serving suggestions
This soup is filling enough on its own, but you can certainly add some bread or rolls for dipping, like we do. For a complete meal, serve it with a simple green salad. Try it with our homemade ranch dressing or Parmesan peppercorn dressing.

Storing and reheating
Refrigerator: Allow the soup to cool, then transfer it to an airtight container and refrigerate for 3-4 days.
Freezer: Let the soup cool and transfer it to freezer-safe containers, leaving some room for expansion. Label, date, and freeze for up to 2-3 months for best quality. Thaw overnight in the refrigerator before reheating.
Reheating: Reheat the soup in a saucepan over medium to medium-low heat, stirring occasionally, until hot throughout. You can also reheat individual portions in the microwave.
Reheating tip: The pastina will absorb broth as the soup sits, so add a splash of chicken broth or water if needed to loosen it up.
Food safety: Reheat leftovers to an internal temperature of 165°F. Refrigerate the soup within 2 hours of cooking, or within 1 hour if the temperature is above 90°F.

Chicken Vegetable Soup
Ingredients
- 1¼-1½ pounds Chicken Breast boneless and skinless (about 2 large chicken breasts)
- ¼ teaspoon Salt
- 7 cups Chicken Broth divided (about 2-2¼ cups for the chicken and the remaining for the soup)
- 1 tablespoon Olive Oil
- 1 medium Onion finely diced
- 1 Celery Rib diced or sliced
- 3-4 Garlic Cloves minced
- 1 tablespoon Tomato Paste
- 1 teaspoon Italian Seasoning
- ¼ teaspoon Black Pepper
- ¼ cup Small Pasta we used pastina, a tiny pasta, but other small pasta will work as well
- 10 ounces Frozen Mixed Vegetables cooked for about half the time directed on the package, just enough to defrost, then drained well
- Chopped Parsley for garnish optional
Instructions
- Place the chicken breasts in a large saucepan or pot, large enough for them to fit side by side without overlapping. We use a 4-quart enameled Dutch oven. Cover the chicken with chicken broth, about 2-2¼ cups, and add a pinch of salt.
- Start the chicken over high heat and bring the broth to a boil. As soon as it starts boiling, lower the heat to medium-low and cover. Simmer gently for 20-25 minutes, turning halfway through. Make sure the internal temperature of the thickest part of the chicken breast is at least 165°F.
- Remove the chicken breasts from the poaching liquid and place them on a cutting board to cool. Strain the cooking liquid through a fine-mesh sieve into a bowl or large measuring cup and reserve.
- When the chicken has cooled enough to handle, shred, slice, or cut it into bite-sized cubes. Tip: You can start preparing the soup while the chicken cools, then shred it during the first simmer to save time.
- If there's no liquid left in the pot, there's no need to wash or wipe it. If it's wet, pat it dry.
- Return the pot to medium heat and add the olive oil. When it's hot, add the onion and celery. Cook for 3 minutes, stirring often.
- Add the garlic, tomato paste, Italian seasoning, and black pepper. Cook for 30-60 seconds, stirring frequently.
- Add the reserved chicken broth and the remaining chicken broth while stirring and gently scraping any bits off the bottom of the pot.
- Raise the heat and bring the broth to a boil. Lower the heat to medium-low, cover, and simmer gently for 5-7 minutes to let the flavors come together.
- Stir in the pasta. If needed, raise the heat to bring the soup back to a simmer. Cover and cook for 5 minutes, until the pasta is almost done. Stir often at first to keep the pasta from sticking to the bottom.
- Add the reserved cooked chicken and the mixed vegetables and stir well. Raise the heat to bring the soup back to a simmer. Lower the heat to medium-low, cover, and cook for 5-7 minutes to finish cooking the pasta, heat the soup through, and let the flavors develop further. Stir occasionally.
- Taste and add salt if needed. As a reference, we did not add extra to ours. Garnish with chopped parsley, if desired, and serve.
