Baked Buffalo Wings

Buffalo chicken wings are a party favorite and a game-day must. These spicy chicken wings are crispy and fall off the bone, and yes, they’re baked not fried.

 

The trick is to use a baking sheet lined with a cooling rack so air can circulate around the wings. The skin dries up nicely and the inside stays tender and moist.

 

With this recipe you get a nice big batch, and since these spicy Buffalo wings are made in the oven, you don’t have to fry batch after batch. Boom! They’re all done at the same time; and you get to party with the rest of the them!

 

For the Buffalo wings sauce we keep the recipe really simple. A combination of butter and a cayenne pepper based hot sauce like Crystal or Frank’s. That’s it. Really simple, really delicious!

To make these baked Buffalo wings you will need

3-4 pounds Chicken Wings, drums and flats separated and wing tips removed (about 24-32 wing pieces)

1 teaspoon Salt, or to taste

1 teaspoon Garlic Powder

¼ teaspoon Black Pepper

Cooking Spray

4 tablespoons Butter, melted

4 tablespoons Cayenne Pepper based Hot Sauce, use more for spicier wings

 

You will also need

2 Large baking sheets

1 Cooling rack

Pastry Brush

 

Prep Work

Preheat Oven to 375°F

 

Combine the salt, garlic powder and pepper in a small bowl. Place the wings in a large bowl and sprinkle some of the seasoning mix. Give them a good stir, sprinkle some more. And so on… This beats, laying them out and turning each wing to get the seasoning on both sides.

Spray a large baking sheet lightly with cooking spray. Arrange the chicken wings, in a single layer, skin side up. Bake them for 30 minutes.

Line a clean, large baking sheet with a cooling rack. Spray the cooling rack lightly with cooking spray. Transfer the wings to the fresh pan, arrange them in a single layer (skin side up).

The cooling rack will elevate the wings and allow air to circulate around them. Bake the chicken wings for 15 minutes. Make sure the internal temperature of the chicken wings at this point is at least 165°F.

 

In the meantime, make the Buffalo wings sauce

Add the melted butter and hot sauce to a bowl, stir vigorously to combine.

 

Remove the wings from the oven. Turn them so the paler side is up (skin side down). Brush them with the buffalo sauce and bake for another 5-7 minutes.

Turn each wing one more time and brush with the sauce. Return the wings to the oven and bake another 10 minutes or so.

Pour or brush any remaining sauce over the wings as soon as they come out of the oven and add a little extra hot sauce if you like them spicy. Enjoy!

 

Cook’s notes

If the butter firms up while the wings are in the oven, give it about 5 seconds in the microwave and it will melt again.
