Chicken Salad Sandwich

This chicken salad sandwich combines cooked chicken, grapes, celery, and toasted almonds in a creamy dressing for an easy lunch or light dinner.

Ingredients

  • 3 cups Cooked Boneless, Skinless Chicken Breast cold or cooled, chopped or thinly sliced
  • ¼ cup Celery finely sliced or diced (about 1 small rib)
  • ¼ cup Sliced Almonds toasted
  • ½ cup Mayonnaise
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Honey
  • ½ cup Red Seedless Grapes sliced into rounds
  • ¼ teaspoon Salt plus more if needed at the end
  • ¼ teaspoon Black Pepper
  • 8 slices White Bread or use your favorite bread or rolls, if desired
  • Lettuce and Tomatoes for topping, optional

Instructions

  • Add the mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper to a small jar or bowl.
  • Stir until smooth and well combined. Cover and refrigerate until ready to use.
  • Toast the almonds in a dry skillet over medium-low heat for a few minutes until lightly golden and fragrant. Stir frequently and watch them closely so they don't burn. Remove from the skillet and let them cool.
  • Add the cold or cooled cooked chicken, celery, grapes, and toasted almonds to a large bowl.
  • Add the dressing and gently toss with a rubber spatula until the chicken and other ingredients are evenly coated.
  • Taste and add more salt and pepper, if needed. Cover and refrigerate until cold, about 30 minutes.
  • To make the sandwiches, add a generous amount of chicken salad to a slice of bread. Top with lettuce and tomatoes, or your favorite toppings, if desired. Cover with another slice of bread and serve.

Notes

Leftover grilled or roasted chicken works well, or use rotisserie chicken. Make sure the chicken is cold or cooled before making the salad.
For meal prep, store the chicken salad separately and assemble the sandwiches when ready to eat so the bread doesn't get soggy.
If dark meat is what you have on hand, you can use it in place of the chicken breast or combine the two. Just keep in mind that the chicken salad will be a little richer and not quite as light.
