Fried Beef Empanadas

Frozen Empanada Dough

Gently sauté the onions, carrots, celery, and garlic. Add the ground beef and spices, raise the heat and cook until browned.

When the beef is browned add the tomato sauce, beef broth, and olives. Cook the picadillo gently until it is saucy, not soupy.

Let the meat filling cool. Work with one empanada disk at a time, add about 2 heaping tablespoons of the picadillo in the middle.

Use a small pastry brush to moisten around the edges of the empanada dough with the egg.

Fold the dough round in half making a half circle. Press the edges together gently.

Use a fork to press the edges together and create a seal. Set the empanada on a parchment lined baking sheet and repeat with the remaining ingredients.

Heat the oil to about 325°F to 350°F. Add 1-2 empanadas, at a time. Fry them for 1-2 min. until golden. Flip, and fry for another 1-2 min. until golden on both sides.

Remove from the oil with a slotted spoon or spatula and set on a baking sheet lined with a cooling rack or paper towel lined plate. Repeat with the rest.

Serve the empanadas with hot sauce, if desired, and enjoy.
