Grilled Shrimp Skewers and Butter Lime Sauce

Ingredients

shrimp skewers

  • 1 pound Large Shrimp peeled and deveined
  • 1 teaspoon Kosher Salt
  • ¼ teaspoon Garlic Powder
  • Pinch Black Pepper
  • 4 Bread Rolls for serving optional

Butter lime sauce

  • ½ cup Butter 8 tablespoons
  • 1 Garlic Clove grated use a microplane / hand grater; or finely mince the garlic
  • 2 tablespoon Lime Juice 2-3 limes, depending on how juicy they are
  • ½ teaspoon Kosher Salt
  • Pinch Black Pepper

  • 8 Bamboo skewers, (10 inch), soaked in water for a least 1 hour and
    Grill Spray

Prepare the shrimp

  • Peel and clean the shrimp.
  • Skewer the shrimp, going through both ends. Add about 4 shrimp to each skewer, depending on the size of the shrimp.
  • Season the shrimp on both sides with the salt, garlic powder and black pepper.

Make the butter lime sauce

  • Add the butter to a small saucepan. Gently heat the butter over medium-low heat.
  • When the butter is melted, add the grated garlic. Cook the butter and garlic for 1 minute, stirring frequently.
  • Add the lime juice, ½ teaspoon of salt and black pepper. Stir the sauce until everything is combined. Continue to heat the sauce until warmed through.
  • Taste the butter lime sauce and add salt and pepper if need. As a reference we added a pinch of salt to ours.
  • Lower the heat to low and keep the sauce warm while you grill the shrimp.

Grill the shrimp

  • Preheat the grill to medium heat. Spray the grates lightly with grill spray to minimize sticking.
  • Grill the shrimp skewers for 5-7 minutes, or until cooked through. Turn the shrimp about halfway through the cooking time. When shrimp is cooked through, it will be opaque and will turn a pink color.
  • If you’re planning on serving the shrimp on bread: after removing the shrimp from the grill, place the bread, cut side down directly on the grates. Grill for a minute or two until lightly toasted.
  • Press the bread down lightly with a grill spatula to flatten them out a little bit and get some grill marks going.
  • Serve the shrimp skewers with the butter garlic sauce.

Notes

Grilling the shrimp only takes a few minutes. So get the butter lime sauce started and leave it on low heat. Just make sure to check up on it and give it a stir every so often.
 
If you plan on serving the shrimp skewers on bread, have it ready before starting the shrimp. Cut each roll in half. Same goes with any other sides you're planning, get them going first.
