½cupPopcorn Kernelsmakes approximately 16 cups of popcorn
1tablespoonCanola Oil
¼teaspoonSaltor to taste
8ouncesWhite Chocolate Chips
¼cupCrushed Peppermint Candies

Parchment Paper

Instructions
Make the Popcorn
Place the popcorn kernels, salt and canola oil in a large, heavy bottom pot over medium-high heat, cover. Give the pot a shake often. When the kernels begin to pop, shake the pot quickly and frequently to prevent the kernels from burning while the popcorn gets going.
Continue shaking frequently, when the popping slows to 1-2 seconds between pops; remove the pot from the heat. Uncover immediately to prevent condensation from making the popcorn soggy. Allow the popcorn to cool.
Melt the white chocolate
Add the white chocolate chips to a medium bowl. Microwave the white chocolate for 10 seconds on high. Remove it from the microwave oven and stir. Continue microwaving the chips 10 seconds at a time and stirring between each session until the white chocolate is melted and smooth (about 50 seconds to 1 minute total).
Make the white chocolate peppermint popcorn
Line 2 large baking sheets with parchment paper. Spread the popcorn evenly on the two baking sheets. Drizzle the white chocolate over the top of the popcorn.
Then, sprinkle the crushed peppermint candies and toss gently. Spread the popcorn out on the baking sheet gently using a rubber spatula and allow it to dry.
Notes
Don't just place the chocolate in the microwave for a minute, that won't work.The chocolate will become a clumpy mess, and unusable. You may be able to find crushed peppermint candies at craft stores or the supermarket around the Christmas season. If you can’t find them, make your own by crushing a few candy canes. Place the candy canes in a re-sealable bag and tap them gently with a mallet. Wrap the bag in a kitchen towel prior to crushing to avoid a sugary mess on your workstation.
