POTATO CORN CHOWDER

Ingredients

Melt the 3 tbsp. of butter in a large pot or dutch oven over medium heat.

When the butter is melted add the onions and celery. Cook for 3 minutes.

Next, add the garlic, salt, and pepper. Cook for 1 minute, stir often.

Then, add the flour and cook for 1-1½ minutes to cook out the raw flour taste.

Add the broth while stirring briskly with a whisk or a wooden spoon.

Add the creamed corn, stir well. Cover and simmer the soup for 10 min.

Add the potatoes and corn. Cover and simmer for 15 min. or until the potatoes are tender.

Lower the heat to low, add the half and half, stir well, cover, and cook for 2-3 min. to heat.

Taste and add salt if needed. As a reference we added ½ tsp. to ours.

Ladle the soup into bowls, garnish with bacon bits and chopped chives, if desired.
