Beef Vegetable Soup

Sirloin steak, salt, oil, onion, celery, garlic, tomato paste, oregano, cumin, pepper, beef broth, potato, pastina, and mixed vegetables

Ingredients

Pastina means “little pasta”, there are several shapes, like stelline (little stars), orzo (rice shape) and alphabet. Find pastina in the pasta aisle of larger supermarkets or online.

Use a heavy pot to make soup; it retains heat.

Keep cut, peeled potatoes in cold water.

Use sturdy vegetables that will hold up to the cooking time.

Use sirloin steak because it is tender yet reasonably priced.

Recipe Tips

for the best soup

Cook the steak pieces 3 minutes per side until browned. Add the onions and celery and cook 3 minutes, stirring frequently.

Add the garlic, tomato paste and seasoning, cook 2 minutes. Add the beef broth, cover and simmer for 15 minutes.

Add the potatoes and pastina, cover the pot and simmer 10 minutes. Add the vegetables and cook an additional 10 minutes.

Taste the vegetable beef soup and add salt if needed. Serve with a piece of crusty bread or a side salad and enjoy!
