Creamy Chicken Rice Bake

Simple Ingredients

chicken breast, chicken broth, thyme, salt, white rice, mixed vegetables, butter, plain breadcrumbs, condensed cream of chicken soup, prepared cheese

Use leftover rice or cook long grain white rice. Add it to a baking dish.

Use leftover chicken or poach or pan fry chicken breast. Cut it into cubes and add it to the rice.

Defrost the mixed vegetables and add them to the ingredients in the baking dish.

Heat the soup, broth, and the cheese in a saucepan, stir until smooth. Add it to the ingredients.

Stir gently to combine the ingredients well. Keep stirring until everything is coated with the creamy sauce.

Sprinkle the top of the chicken and rice with the breadcrumbs. Sprinkle them lightly, don’t pack them down.

Cover the dish loosely with a piece of foil and bake at 375°F for 30 minutes. Uncover and bake 10-15 minutes.

Let the casserole rest for a few minutes before serving.
