Sopa de Res Cuban-style Beef Soup

This soup is an easy and affordable way to get a home-cooked, nutritious meal.

Ingredients

steak, beef broth, water, potatoes, tomato sauce, white wine, flour, olive oil, carrots, onions, cumin, pepper, salt, garlic, dried oregano

Season the beef with salt, pepper, oregano, and cumin. Then, coat lightly with flour.

Heat the olive oil in a large pot over medium heat. Add the onions and cook them gently for 3 minutes, stirring frequently.

Add the garlic and cook it gently for 1 minute, stirring often.

Add the beef to the pot, cook it for 3 minutes, stirring frequently to brown a little on all sides.

Carefully add the wine while stirring and gently scraping any bits off the bottom of the pot. Cook for 1-2 minutes.

Deglaze the pot

Add the tomato sauce, beef broth, and water, stir. Raise the heat and bring to a boil. Then lower the heat, cover, and simmer for 30 minutes.

Add the potatoes and carrots to the pot. Bring to a boil, then lower the heat, cover and simmer for 25-30 minutes. Uncover the last 10-15 minutes to thicken a bit.

Add the vegetables

While the soup cooks make white rice. We will use it when the soup is done for serving.

Make the rice

To serve, add  rice to a bowl and top with a generous serving of soup.
